In fact, Grapefruit sweet gruel is a popular dish in the southwestern region, especially Can Tho province. The main ingredients of this sweet is green beans, tapioca starch and especially grapefruit slivered rind. Local people in the southwestern region have made full use of fertile land to make this sophisticated che dessert.
The grapefruit slivered rind is soaked in salt water to remove the bitter taste, then cut into small square pieces.
