I - Origin of Vietnamese Cha Gio
Fried egg roll is an outstanding dish in Vietnamese cuisine, often appearing in daily meals and at parties. Northern people often call this dish “nem rán”, Central people call it “ram”, and Southern people call it “Chả Giò”. Traditional Vietnamese egg roll ingredients include minced pork, bean curd, mushroom, vermicelli, eggs, carrots... with spices, salt, and fish sauce, but then it is further modified with shrimp meat, crabmeat. After being mixed, the mixture of ingredients will be rolled into a cylindrical shape, fried in hot oil. Pork egg rolls are a traditional type of egg roll and the quintessence of Vietnamese cuisine.
The ingredients to be prepared (recipe) include:
Minced pork: 250gr
Wood-ear Mushroom: 50gr
Chicken eggs: 1
Minced purple onion: 1 teaspoon
Fish sauce: 1 teaspoon
Braised rice paper: 1/2 pack
Cooking oil: 1/2 cup
Pepper: 1/2 teaspoon
How to make Vietnamese egg roll
Step 1: Soak vermicelli, mushrooms in warm water to soften, then cut them into small pieces. Taro is to be peeled, washed then also chopped.
Step 2: Add the ingredients including minced pork, vermicelli, mushroom, taro, chicken eggs, minced purple onion, fish sauce, pepper, salt in a large bowl and mix them well.
Step 3: Put the mixture of Cha Gio’s fillings into the rice paper with the right amount and roll it firmly
Step 4: Put the pan on the stove, pour the cooking oil into the pan so that the amount of oil covers the egg roll. Wait for the oil to heat, drop the egg rolls in and stir well to brown both sides.
Step 5: Pick up the egg rolls to a disk with oil blotting paper available. Meanwhile, you mix sauce including fish sauce, garlic, sugar, lemon and prepare raw vegetables to be served together with the egg rolls.

The seafood fried egg roll dish is a variation of the meat egg rolls, the ingredients and the way of making it is not different from the egg rolls filled with meat.
150g crab meat
10gr of purple onion and minced garlic
1 bottle of mayonnaise
2 packs of rice paper rolls
2 chicken eggs
1 bag of ruffled flour
Steps to make Vietnamese Cha Gio
Step 1: Wash shrimp and squid, deodorize the crab with white wine (cooking wine). Then, dice shrimp, squid, carrot and onion, especially cut the crab meat into small pieces so that the egg rolls will not be too big to eat.
Step 2: Put the mixture of shrimp, squid, and crab meat in boiling water to boil it, then rinse it in cold water.
Step 3: Put the pan on the stove, fry the minced purple onion with cooking oil to make it fragrant. Fry the onions first, then pour the mixture of drained shrimp, squid, and crab meat into the pan. After that, you can add spices to the mixture to have more flavour, then stir the mixture so they can absorb the spices.
Step 4: After the mixture cools, add 200gr of mayonnaise, mix well and let cool.
Then proceed to make the egg rolls like the steps 3, 4, 5 of making pork egg rolls.
3 - Vegetarian egg rolls (Cha Gio chay in Vietnam)
Vegetarian egg rolls are simple and easy to make, and are a favorite dish of vegetarians. The egg rolls are fried crispy yellow with simple ingredients inside, which will not taste greasy.
1 pack of green bean rice paper rolls
50gr green beans
1 small pack of vermicelli
Cassava tubers, carrots, tofu
Common types of ingredients and spices that are always available in the kitchen: monosodium glutamate, ground pepper, sugar, cooking oil.
Best Vietnamese egg rolls recipe for vegetarian version
Step 1: Wash and julienne carrots, taro, cassava tubers, potatoes or sweet potatoes, then soak in white salt water for about 15 minutes and then take out and drain. Simultaneously proceed to soak the mushrooms in warm water for about 15-30 minutes and then cut the root and julienne.

Recipe for mixing Vietnamese egg roll sauce
The ingredients include:
1 lemon (squeeze to get lemon juice)
3 tablespoons of fish sauce
4 tablespoons of fresh water
1 teaspoon of sugar
1 garlic + 3 chili (minced)
Put the water, fish sauce, lemon juice in a bowl and stir well until the sugar dissolves, then add garlic, minced chili.
